Coconut Pie

Sharing is caring!

Just reading this recipe makes me want to bake this dessert again! The creamy, smooth texture of the filling with the firmness of the coconut matches so well with the crispy crust. There’s no match for a homemade Coconut Pie.

This recipe is also super simple, with few ingredients and few steps. It’s truly mix, bake, and enjoy. Be sure to include the lemon flavoring and lots of coconut. Watch those edges closely so you don’t burn them. Check out the notes section of the recipe for helpful tips and reminders.

The recipe is for 2 pies. Half the recipe if you only want 1 pie, or go ahead and make 2. You can keep a pie and carry a pie to a friend. They will definitely thank you.

  • 2 pie crusts
  • 4 eggs
  • 1 1/2 cup sugar
  • 4 tbsp flour (leveled)
  • 4 cups milk
  • 1 tsp Lemon flavoring
  • 2 cups coconut

  • Mix all ingredients together and divide evenly between the pie crusts.
  • Bake @ 375 degrees for about 45 minutes until the top of the pie gets lightly browned.
  • Enjoy!

If the edges of the crust start to burn during baking, cover them with a thin strip of tin foil.
For the 2 cups of coconut, my mama says they should be “good” cups! This means don’t be skimpy, load those cups full!
How do you know when the pie is done? Mama says to open the oven and give the pie a gentle shake and you will be able to tell if the middle is done!
For a more moist pie, add 1/2 tsp. cream of tarter to your mix.
