The recipe is for 2 pies. Half the recipe if you only want 1 pie, or go ahead and make 2. You can keep a pie and carry a pie to a friend. They will definitely thank you. I know there are a few people out there in the world who dislike coconut, but for those of us who love it, this recipe is definitely a keeper.

Did you know eating coconut has great health benefits? They can help manage blood sugar and may have antibacterial properties. Containing manganese, copper, iron, and selenium, coconuts have anti-inflammatory properties and antioxidants such as gallic acid, caffeic acid, salicylic acid, and p-coumaric acid. Coconuts are also high in fiber. These are all more encouraging reasons to bake a delicious, homemade coconut pie.

Ingredients

  • 2 pie crusts
  • 4 eggs
  • 1 1/2 cup sugar
  • 4 tbsp flour (leveled)
  • 4 cups milk
  • 1 tsp Lemon flavoring
  • 2 cups coconut

Instructions

  • Mix all ingredients together and divide evenly between the pie crusts.
  • Bake @ 375 degrees for about 45 minutes until the top of the pie gets lightly browned.
  • Enjoy!

Notes

If the edges of the crust start to burn during baking, cover them with a thin strip of tin foil. 
For the 2 cups of coconut, my mama says they should be “good” cups! This means don’t be skimpy, load those cups full! 
How do you know when the pie is done? Mama says to open the oven and give the pie a gentle shake and you will be able to tell if the middle is done! 
For a more moist pie, add 1/2 tsp. cream of tarter to your mix.
