Summertime Pasta

Ingredients

  • 1 Zucchini chopped
  • 1 Yellow squash chopped
  • 1/2 Onion chopped
  • 3-5 tsp Sun-dried tomato with garlic California brand (pictured above in the post) is delicious! Add as much or as little as you like. This ingredient gives the veggies so much flavor.
  • Heavy whipping cream just enough to make a slightly creamy mix
  • 1/2 stick Butter chopped, use more or less to suit your taste
  • Italian seasoning just a sprinkle
  • Black pepper just a sprinkle
  • Garlic salt just a sprinkle

Instructions

  • Spray the bottom of a pan with non-stick olive oil cooking spray.
  • Set the heat to medium-high and throw all ingredients in the pan.
  • Stir as the veggies cook and add a bit more heavy whipping cream or butter if needed. The goal is to get just enough creaminess for use as a spaghetti topping.
  • Reduce heat to low, continue stirring.
  • Remove from heat once veggies are cooked to your liking.
  • Cook spaghetti and drain. Top with veggies.
  • Add parmesan cheese if preferred.
  • Enjoy!

Notes

I used regular spaghetti this time but I think angel hair would be even better.
