A Taste of Summer

This strawberry and pineapple margarita pie is the dessert you have been waiting for! It’s so good! You will be so happy that you made this easy recipe when you take the first bite. The flavors are so bright and it’s like a taste of summer in your mouth but trust me, it’s refreshing in any season!

Simple & Easy Recipe

All of the ingredients in this pie are simple to find and use, and they make a great combination. You will definitely taste the lime right away, and the sweetness of the strawberry and pineapple folded in balances out the tartness. It’s not ice cream but it sure tastes like it. And possibly the best part? The saltiness of the pretzel crust. The recipe calls for crushed pretzels but I just broke pretzel sticks into tiny bits and it was delicious.

The next time I make this pie, I will substitute fresh lemon juice for half of the lime juice and decorate the top with sliced strawberries. You could also switch out the pineapples for crushed mandarin oranges. If you try a new twist, let me know what you think!

Ingredients

  • 1 1/3 cups crushed or broken pretzels
  • 1/4 cup sugar
  • 10 tbsp butter, melted
  • 1/2 cup crushed pineapple
  • 2 cups crushed strawberries
  • 1 14 oz sweetened condensed milk
  • 1/2 cup lime juice
  • 1 8 oz Cool Whip

Instructions

  • Mix sugar, melted butter, and crushed pretzels in a pie plate or medium baking dish. Press onto bottom and slightly up the sides.
  • Place the plate/dish into the fridge until ready to fill.
  • In a large bowl, mix sweetened condensed milk, crushed pineapple, crushed strawberries, and lime juice.
  • Stir the entire tub of Cool Whip into the bowl and mix well.
  • Pour the contents of the bowl into the pretzel crust. Depending on the size of your pie plate/dish, you may have enough mix to make 2 pies. I poured the extra mix I had into bowls for anyone who didn't want a pretzel crust, rather than making two pies.
  • Freeze the pie for at least 5 1/2 hours.
  • When ready to eat, thaw the pie out on the counter for 20-30 minutes before cutting.

Just remember, calories don’t count when eating this delicious dessert!
