Blueberry Season
It’s time to brave the heat and go out to pick some blueberries for your new favorite dessert – Blueberry Delight! Not only are blueberries delicious, but these little delights are also packed with so much nutritional value. Blueberries are low in calories so feel free to indulge. They include Vitamin C, K, A, E, and B6, Manganese, and Copper. They also contain anthocyanins and quercetin, which are known as beneficial plant compounds and antioxidants for our health. Basically, blueberries are a tiny fruit that we take for granted. They are so good for us! We should all try to add more blueberries into our diet.
Super Easy Blueberry Recipe
You will have the best dessert for the potluck when you show up with this super easy blueberry recipe. It’s straight from my mama’s recipe box. The directions are so simple and the ingredients are few; no one can mess this up! The ease of the directions compared with the outcome might surprise you. This blueberry dessert is truly delicious, and it makes for a beautiful presentation.
Take a bite while it’s still warm and consider pairing with vanilla ice cream. Any leftovers will still be very tasty the next day when you take this dessert out of the fridge, and you may even prefer it chilled. Everyone who tried this recently when I made it, loved it! I took this to my parents and they both asked for seconds. The entire pan was disappearing before my eyes, so I knew I had successfully recreated my mom’s recipe to their satisfaction. This is a dessert, but the blueberries and pineapples will help you to feel a little bit less guilty for eating a sweet summer treat. If you don’t typically like blueberries, maybe this will be a good way to help you sneak these superfruits into your diet at least once this summer.

Blueberry Delight
Ingredients
- 1 stick butter
- 2 1/2 cups blueberries
- 1 can crushed pineapple
- 1 box cake mix
Instructions
- Melt 1 stick of butter or margarine in a pan.
- Sprinkle in 2 1/2 cups of blueberries.
- On top of the blueberries, add 1 large can of crushed pineapple.
- Gently stir.
- Prepare a box of cake mix according to the package directions and pour it into a 13 x 9 baking dish.
- Pour the mixture of butter, blueberries, and pineapple on top of the prepared cake mix. *You do not need to stir!
- Bake at 350 degrees for 45 minutes.
