Easy Fruit Cobbler

This easy fruit cobbler dessert is absolutely amazing! If you are looking to wow everyone with minimal effort, this is the recipe you have been looking for. It’s so easy and quick, and delicious. My favorite part of this recipe is that you can easily modify the taste by using whatever fruit you want. This can be your new favorite blueberry cobbler, or you can mix it up. I decided to go with fresh peaches and blueberries for a colorful summer dish. I might try pineapples and blueberries next, or peaches and strawberries. The possibilities are fun and I have no doubt they will all be fantastic.

Easy Fruit Cobbler

A quick, delicious dessert filled with fresh fruit!

Ingredients

  • 4 cups fruit of choice
  • 1 tbsp lemon juice
  • 1 large egg
  • 1 cup sugar
  • 1 cup plain flour
  • 6 tbsp melted butter or margarine

Instructions

  • Preheat oven to 375 degrees.
  • Place 4 cups of fruit in a lightly greased 8" square baking dish.
  • Sprinkle with 1 tablespoon of lemon juice.
  • Stir together 1 large egg, 1 cup of sugar, and 1 cup of plain flour until the mixture is coarse.
  • Sprinkle the mixture over the fruit.
  • Drizzle 6 tablespoons of melted butter or margarine over the topping.
  • Bake for 35 minutes or until lightly browned.

Notes

Make sure you do not stir the ingredients after you sprinkle the mixture over the fruit.

Mom’s Favorite Recipe

One reason I love this recipe so much is because my mom placed a little sticker on it that says “my favorite recipe!” Next to the words there is a smiley face wearing a chef hat. I found this recipe card in her box, written in her pretty handwriting. My mom was always such a wonderful cook, and she made everything from scratch. We had no idea how lucky we were growing up to eat such great, homecooked meals all of the time.

You’ll notice in the pictures that I couldn’t find a square baking dish to use. It was totally fine, just use what you have handy. Also, check out that whipped cream. Pair with whipped cream or ice cream, or just plain – you can’t go wrong. You can serve this as a dessert, of course, but it will also make a nice dish for a breakfast with family and friends to complement the other items in your spread.
